Weekday Prep: Apple Muffins

Hope everyone had a great weekend! Today we made the drive to Boston to go to the Sowa Open Air Market. Thankfully the rain held off until afternoon. I would share some pictures but on my way home I realized there was no memory card in my camera. 

Yesterday afternoon we picked apples and I have a few recipes I have been waiting to try. After we got back form the market I made a batch of apple muffins. I figured these would be perfect to have in the morning or for a midday snack.



Apple Muffins 
makes 12 muffins

  • 3 cups all purpose flour
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 c. milk 
  • 1/2 c dark brown sugar
  • 1/4 c  yogurt
  • 1/4 c vegetable oil
  • 1/4 c sugar
  • 2 large eggs
  • 3 and 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/8 tsp baking soda
  • 2 c. chopped apple (peeled)
Oat Topping
  • 1/4 c dark brown sugar
  • 2 Tbsp all-purpose flour
  • 2 Tbsp old-fashioned rolled oats
  • 1/2 tsp ground cinnamon
  • 2 Tbsp unsalted butter
Preheat the oven 425. Line muffin tin with liners. 
Make oat topping by mixing the ingredients in a small bowl.
In a large bowl, mix flour, nutmeg and cinnamon. 
In a seperate large bowl, whisk together the milk, sugars, yogurt, apple sauce, eggs, vanilla, baking powder, salt and baking soda. 
Gently fold wet mixture into the flour, stirring until combined,  be careful not to over mix. 
Fold in the apples.
Spoon the batter into 12 muffin tins, filling each to the top.  Sprinkle topping over each muffin.
Bake for 5 minutes at 425 degrees, at 5 minutes reduce the oven temperature to 375 degrees and bake for another 15-18 minutes, or until a toothpick inserted in the center comes out clean.
Preheat your oven to 425. Spray muffin tin with nonstick spray. Set aside.
