Happy Hour: Ginger Paloma

A traditional paloma is a tequila based cocktail which is flavored with grapefruit soda or juice and served on the rocks with a lime wedge. This ginger paloma uses a ginger- grapefruit infused simple syrup rather than grapefruit soda.
Ginger- Grapefruit Simple Syrup:
1 cup water
1 cup sugar
1/2 of a grapefruit cut into slices
2 or 3 quarter sized slices of peeled ginger
Combine all ingredients except the ginger, bring to boil. Add ginger. Simmer for 5-7 minutes, until the syrup starts to thicken. Remove from heat and allow the ingredients to steep for 10 minutes. Strain the syrup. After using the desired amount of syrup in the drinks, I placed it in an airtight container in the refrigerator for later use.
1 1/2 oz reposado tequila
1 oz ginger grapefruit syrup
1/2 oz fresh lime juice
4 oz club soda
Serve in a tall glass over ice. Garnish with grapefruit and/ or lime wedge. Cheers!
